Zucchini Bread

  • 1 cup oil
  • 2 1/2 cups sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • 2 cups shredded zucchini
  • 1 cup walnuts (optional)
  1. Combine oil, sugar, vanilla, and eggs.
  2. Mix in flour salt, baking soda, and cinnamon until combined.
  3. Add zucchini and walnuts. Mix together until combined.
  4. Scoop batter into 2 bread loaf pans. Bake at 325 degrees F for 50-60 minutes or until done.
  5. Cool in pan for 20 minutes. Then take the loaf out of the pan and finish cooling on a rack.
