Zucchini Bread
- 1 cup oil
- 2 1/2 cups sugar
- 3 eggs
- 1 tsp vanilla extract
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tbsp cinnamon
- 2 cups shredded zucchini
- 1 cup walnuts (optional)
- Combine oil, sugar, vanilla, and eggs.
- Mix in flour salt, baking soda, and cinnamon until combined.
- Add zucchini and walnuts. Mix together until combined.
- Scoop batter into 2 bread loaf pans. Bake at 325 degrees F for 50-60 minutes or until done.
- Cool in pan for 20 minutes. Then take the loaf out of the pan and finish cooling on a rack.
